So we foreclosed on them (cost $1,000 in fees) then added a deck and a new metal roof ( $3,000) then started renting it for $500 a month to a new tenant, she rented it for 2 years and then we evicted her, put new carpet and laminate in ($3,000) then found a new renter for $500 a month for 1 more year.

I used to work on Hotels and what we would do between rooms for the most sound proof wall assembly was have two layers of gypsum (mostly for fire protection) on each side and then stager 2" metal studs (4" thick wall total) with insulation wrapped between.

You'd need to either keep it as is or paint it to match the cupboards.I've seen a variety of things used successfully as a backsplash - tin ceiling tiles, laminate flooring, even sheet metal - my best advice would be to just take your colors to the store and see what you can find that will pull everything together.
