STR: Mattress Protector or Mattress Encasement

Starting a STR and need help deciding between a mattress protector or mattress encasement. Both are waterproof, hypoallergenic, etc.

I am thinking the protector is more easily removed to wash but the zippered encasement would protect the entire mattress. Also, how many do you recommend having per mattress?
